Pistachio-Crusted Halibut

Last night's dinner was something new and fun.  Another stolen idea from my favorite new cook book, served with a side salad ("if its not on the side, I send it back!" - anyone else watch The Office too much?)

I bought whatever the fish guy said was enough for two people, cut it into 6 rectangular chunks, and made like I was making chicken cutlets:

Salt and peppered the fish
Dipped each one in a beaten egg
tossed it in a mixture of cornmeal and pistachios that I put through a food processor to achieve a chunky-breadcrumb consistency

Fry in veggie oil for roughly 2 minutes on each side. Serve with a nice salad of your choice!
It was easily one of the juiciest fish dishes I've ever had.  Came out great and looked pretty awesome with the green nuts. (HA! nuts)
