Shrimp Summer Rolls for Robert

This post is at the request of Robert (the Donger), fellow lover of Asian cuisine and answerer of all my lame "you should know this already" questions at work.  SHOUT OUT!

Tonight we made "Vietnamese" Summer Rolls.  The past few posts may not have been that good for the wasteline, so I felt like some veggies were in order tonight.  These became my obsession at mall restaurants everywhere.  They used to have them at Stir Crazy, they have them at Cheesecake Factory, but did you know they are easy to make at home?? And totally healthy, so you should!  Its pretty much a salad wrapped in rice paper.  Exotic tastes, looks cool, fun activity if you are making them with someone else.

All you need it the rice papers, stuff to put in them, and stuff for a sauce.  Here's whats I like in mine:

Fillings:
Shrimp (i split them in half so they are more flexible)
Shredded carrots / cucumbers / zucchini / red pepper (any combo or all of the above)
Sliced avocado
Cilantro
Chopped peanuts??
Tonight we used up some lettuce in them.

Sauce:
A little soy sauce
A little sesame oil
A little ginger (buy pre-minced in a jar - WHATEVER!)
maybe some garlic?
A tad of honey or Mirin if you have it

Directions:
Fill a pie dish or shallow pan or something "ricepaper-shaped" with warm water.  Stick a towel down next to it on the table.  Take a rice paper sheet and dip it in the water until it gets all soft, pull it out and lay it on the towel.  Fill it with goodies and roll it up like a burrito.  Stick it on a plate, dip it in the sauce when you eat it!




We followed dinner up with Raw goji-maca-cacao bars with a cacao/coconut oil drizzle (or plop since it was rather chunky).  The recipe is too ridiculous to type up but can be found in the EverydayRaw cookbook by Matthew Kenney.  They are pretty good!
