Raw Zucchini Pasta with Basil Cream Sauce

Another raw-vegan entry.  This one was lovely, and far less complicated then almost any raw entrée I've made.  Although I must say, I ate it for lunch at work today, and about 2 hours later was so starving all over again that it felt like I hadn't eaten anything.  Still trying to overcome that problem when eating only veggies. I'm a carb gal. Always have been, always will be.

I <3 bread.

Ok, so zucchini on a mandolin slicer to make spaghetti-like strands, some tomatoes, and some pine nuts, topped with the following lovely sauce...

Combine in a blender:
a large handfull of fresh basil
1 cup raw macadamia nuts
1 clove of garlic
1 teaspoon nutritional yeast (this makes it taste semi-cheesy)
juice of 1/2 a lemon
1/4 cup olive oil
1/4 coconut water (or plain water, but I had just split a coconut and had the water on hand, HA!  That's friggin random as hell)

Salt and pepper.

YUMMY! And very pretty too.

PLEASE NOTE: the garlic clove also had the expected effect on my breath.  Soooooo, if you plan on making out, please have your partner eat this as well.  2 garlics cancel eachother out.
